In 1841 the Bryant Family established Highland Farm on 250+ acres in Wayne County, Pennsylvania. Today Bill Bryant runs the farm with 160 head of registered Holstein cattle. Son Zack returned in 2005 to carry on the tradition, improving the grazing program and adding a small herd of whey-fed pigs. Daughter Emily returned in 2006 to establish a small raw milk cheesemaking operation that would end up as "Calkins Creamery". Today Emily converts her family's grass-fed raw milk into multiple varieties of farmstead/artisan cheese. Her cheeses can be found in 100+ locations across New York, Pennsylvania, New Jersey, Maryland & Washington DC.
